Palm Sugar Appam


This post is an entry for SNC Challenge,which don't need any introduction any more..This month South Team member Shama Nags challenged us with Pal Sugar Appam.,which turned out quite interesting sweet snack.
Unlike every month,this time i am last to submit my entry....but still i am happy that atleast i managed to prepare it. 


After couple of fail attempt (first 2-3 actually turned out like halwa  ) i managed to make them pretty perfectly  !!


After having it I felt like,this sweet pancake is actually a reply for our North's Pua (which is sweet flour batter,deep fried..have crispy at edges and soft in center)  !!



INGREDIENTS
(6-7 Appam)

1/2 Cup Boiled Rice
1/2 Cup Raw Rice
1 tbsp Urad Dal
4-5 tbsp Jaggery/Palm Sugar(grated)
2-3 tbsp Water
3-4 tbsp Ghee


DIRECTIONS
  • Soak Rice and dal separately for 2 hours.
  • Make fine paste of boiled rice,soaked rice and dal with 3-4 tbsp water.
  • Boil jaggery and water together to get thick syrup.Strain and mix it into rice-dal batter.
  • Batter must be runny but not very thin.
  • Heat non stick pan.Grease the bottom with little bit of ghee.
  • Pour a laddle full batter in center and tilt the pan to make dosa like pancake.
  • Low the heat and let it cook till you get brown edges.
  • Carefully remove from pan using wooden spatula.
  • Serve as it is or with honey.



# I folded it when it was still hot.it will become crispy once get cool down.

Coconut Monkey Bread


i prepared this couple of months ago,just after i tried my Cinnamon pull apart bread..i just wanted to try something interesting and different taste..i heard of monkey bread over internet.i think the name if because you can just pick up the pieces from bread like monkey ...all of them were having similar flavors..but i wanted to make it with something new...Finally dared to come up with this which turned out simple delight for any coconut lover ! 



So here is my very own recipe of Coconut monkey bread..i used same recipe for bread dough i  used in cinnamon bread..i also sprinkled leftover coconut sugar on top witch gave a really nice crust ! So,just go ahead and try this out...







INGREDIENTS

2 Cup All Purpose Flour
1/2 Cup + 2 tbsp Sugar(granual)
1 tsp instant Yeast
1/4 Cup Water
1/4 Cup Coconut Milk
1tbsp Milk powder(optional)
1 Egg
1/2+1tbsp Cup Coconut(powdered)
1/4 tsp Cardamom powder
1/4Cup +1tbsp Butter


DIRECTIONS


  • Soak yeast with 2 tbsp sugar in warm water for 10 minutes.
  • Heat milk with 1tbsp of butter untill butter just get melted.Let it come on room temperature than mix it with yeast mixture.
  • Mix Flour with milk powder,1 tbsp coconut powder and salt in a bowl.Make a well in center and pour some of water milk liquid in it.Make rough dough by adding liquid gradually.
  • Whisk the egg and add it in the dough and mix it using spatula.It will take some time to get incorporated with dough.Finally you will get a sticky dough.
  • Using oily hand just keep it in a greased bowl and leave it with close lid for couple of hour.
  • Mix together powdered sugar,coconut powder and cardamom powder in bowl.
  • Melt the butter in bowl and heat untill it turn into light brown in color.
  • After 2-3 hour dough will be soft and not at all sticky.Knead it for few minutes.
  • Pull out the small rough chunks from dough and keep aside. 
  • Grease the baking dish.
  • Now take one dough chunk,brush it with butter then roll it over coconut sugar mixture.Place it in baking dish.similarly do it with all remaining chunks and place over each other in baking dish.sprinkle remaining coconut sugar mixture on top of it.
  • Leave it on room temperature for next 15 minutes.
  • Bake it for 40 minutes in preheated oven on 175'C.
  • Let it rest for at least 2 hour before serving.

#May be i ll try it with coconut oil for even more intense flavor !
## Use sugar as per your sweet tooth.

Strawberry Shake


Summer is here with a bang again...so does the season of shakes,juice, mock tails for my kitchen ..these are delicious healthy and keeps us hydrated at the same time ! Everyday Pankaj straight away check fridge to surprise himself as soon as he comes back to home ! But as m back to work and not able to be at home everyday..i really miss his smiling face while enjoying his drinks . Hence i decided to write and stick some notes in fridge for him to prepare these by himself..




This shake is very easy to make yet filling after all this sweaty and hectic day..Some times i top it up with some extra ice-cream to make extra exotic ! 




INGREDIENTS
(2-3 Servings)

1.5 Glass Milk(Super Chilled)
1-2 Scoops of Strawberry Ice-cream
5-6 Fresh Strawberries
1 tbsp Sugar(optional)

DIRECTIONS
  • Put everything in blender and blend for couple of minutes.
  • Pour in serving glasses.
  • Top up with fresh berries or ice-cream and serve immediately.

# Prefer fully ripen berries for better result.
## You can froze the strawberries before using it.
