Palm Sugar Appam


This post is an entry for SNC Challenge,which don't need any introduction any more..This month South Team member Shama Nags challenged us with Pal Sugar Appam.,which turned out quite interesting sweet snack.
Unlike every month,this time i am last to submit my entry....but still i am happy that atleast i managed to prepare it. 


After couple of fail attempt (first 2-3 actually turned out like halwa  ) i managed to make them pretty perfectly  !!


After having it I felt like,this sweet pancake is actually a reply for our North's Pua (which is sweet flour batter,deep fried..have crispy at edges and soft in center)  !!



INGREDIENTS
(6-7 Appam)

1/2 Cup Boiled Rice
1/2 Cup Raw Rice
1 tbsp Urad Dal
4-5 tbsp Jaggery/Palm Sugar(grated)
2-3 tbsp Water
3-4 tbsp Ghee


DIRECTIONS
  • Soak Rice and dal separately for 2 hours.
  • Make fine paste of boiled rice,soaked rice and dal with 3-4 tbsp water.
  • Boil jaggery and water together to get thick syrup.Strain and mix it into rice-dal batter.
  • Batter must be runny but not very thin.
  • Heat non stick pan.Grease the bottom with little bit of ghee.
  • Pour a laddle full batter in center and tilt the pan to make dosa like pancake.
  • Low the heat and let it cook till you get brown edges.
  • Carefully remove from pan using wooden spatula.
  • Serve as it is or with honey.



# I folded it when it was still hot.it will become crispy once get cool down.

Orange-n-Jam Pancake





Some days back i posted here my Coconut Pancakes,which were too whole wheat ! this time i tried fruity version and served them with oranges and jam instead of honey or maple syrup.. it was loved by all...

I am gonna try different versions by using other fruits very soon..Right now i am just waiting for summer for Mangoes 





This is my way to have my pancake !!


INGREDIENTS
(4-5 Pancakes)

1 Cup Whole Wheat Flour
1.5tbsp Baking powder
1 Cup Milk
1/4 Cup Orange Juice/Water
1tsp Sugar
2tbsp Jam (Orange marmaled/mixed fruit)
1tbsp Oil
2tbsp Butter(melted)
Pinch of Salt
8-10 Orange Slices(d-seeded)


DIRECTIONS

  • Sieve flour and baking powder together.
  • Mix milk,oil and juice/water,make thick batter.
  • Heat jam with 1 tbsp water for few seconds than mix in batter.
  • Finally melt the butter and mix in.
  • Heat non-stick pan,Place a ladle full batter in center and let it spread by its own.
  • When it look cooked at edges,flip and cook for another 4-5 minutes.
  • Serve hot with jam spread and orange wedges.


# Jam spread could be make by melting 4 tbsp jam with 2 tbsp water.

Coconut Pancake (Eggless)




Pancakes are always in my prime list to try from starting..i even tried couple of versions... N i admit,i can't stand the egg smell in-spite of fluffy n light texture...Finally came with my this recipe which is simply perfect without any eggs!!!



These are really got very rich coconut flavor in them which makes them strictly for coconut lovers.
I made some of it in sweeter version by mix nuts and extra powdered sugar for his after lunch dessert and loved the surprise ! :)








INGREDIENTS
(4-5 pancakes)

1Cup All purpose Flour
1/3 Cup Coconut (shredded)
1.5 tbsp Sugar

1 tbsp Baking powder
1/4 tsp Baking Soda
1Cup Coconut Milk/Milk
1tsp Cream(optional)
1Cardamon (powdered)
Pinch of nutmeg
Pinch of Cinnamon
Pinch of Salt
1 tbsp Coconut oil/Oil



DIRECTIONS

  • Grind coconut with spices and sugar together for few seconds.
  • Take flour in a bowl and mix in coconut mixture.
  • Make thick batter using milk,than mix in coconut oil/oil.
  • Finally mix in baking powder and baking soda.
  • Heat the non-stick pan on medium heat.
  • Brush some butter on pan.pour 1 full ladle of batter in center(don't spread),let it spread by its own.
  • Let it cook till edges look cooked and top changes the color(will take about 2 minutes).Flip and cook for another 2 minutes.
  • Top it with any syrup or honey and fruits,serve.


# You can use butter instead of oil.don't use salt in that case.

Tapioca Pancake



Tapioca i.e sago or sabudana in hindi..pancakes,parathe or thalipeeth.....Whatever u wanna call it,the taste will remain same ! ;)  I was having a packet of sabudana in my cupboard from navratri time..n after having khichdi of it for 9 consecutive days of fasting its complete no-no for me to have it again...n also i needed to make something which Pankaj can have as breakfast without knowing its sabudana in that..



So,finally came up with this pancake idea as it consist way too less oil than those deep fried fritters !!!(though i like them too :P ) I made them today in morning for him and he had them all without complaining !! So,i take it as victory for me.



INGREDIENTS
(4-5 Pancakes)

1Cup Tapioca/Sabudana/Sago
3 Boiled Potatoes
1tbsp Whole Wheat flour
1 Green Chili
1 Onion(medium)
2tbsp Green Coriander leaves
1/2tsp Cumin seeds
2tbsp Oil
Salt to taste


DIRECTIONS


  • Wash tapioca and soak in 1/2cup water overnight.
  • Mash boiled potatoes with tapioca finely.Add chopped onion,chili,coriander,cumin seeds and salt,mix well.
  • Add flour and kneed it as dough.
  • Take 2 plastic sheet or foil. Grease it with little oil.
  • Take 1 sheets of plastic of foil.Put 2tbsp of dough on it and place another plastic/foil piece over top of it.
  • Press gently and make 1"thick round shape like chapati.
  • Heat non stick pan and spread some oil on it.
  • Carefully place the pancake on it with the help of plastic.
  • Fry both side on medium heat with little oil for 5minutes.
  • Serve hot with some dipping sauce,chutney or simply with tea.



# Make sure you use very little pressure while spreading the dough in plastic sheet otherwise it will be too flat to transfer on pan and ll break too.
## You can use ghee/butter instead of oil and in more quantity..it will make pancake crispier.
### Can add chili flacks,kari patta or garam masala.
