Steamed Fudge Brownie [whole wheat]


Whoever said that dessert cant be healthy,throw this brownie on his face ;) !!!! These are real real treat when you are watching your weight and have big sweet tooth too :D they are fudgy,dense,light and realllly healthy !



I am on my weight loss journey frm last few months.As they say nice body cant be achieve just in gym but in your kitchen, i keep experimenting with my lunch n snacks.In general people have perception about it as plain tasteless food with no excitement but let me tell you..if you are really determine its not at all true..i started posting healthy recipes recently but not much.but ll try to do more... :)

now coming back to these beauties....i always wanted to make brownies in steaming method as it takes less oil in process.after thinking alot i came up with this recipe.Its perfect !!! they are so guilt free that now you can find some of them always sitting in my fridge corner :P Just try them once n you ll not be disappointed at all.

just out of steamer ! 



I suggest to keep it for rest atleast overnight before cutting.It will soften the bran of whole wheat n texture will improve drastically.


INGREDIENTS

2 Cup Whole wheat Flour
4tbsp Coco Powder(i used diet coco)
1tbsp Baking Powder
1/2tsp Baking soda
3/4 cup walnuts
3tbsp Flex seeds powder
1/2cup strong esspresso coffee
1cup Soya milk
1/4cup Buttermilk
3/4cup Demerara sugar
1/4 cup oil



DIRECTIONS


  • Mix flex powder with esspresso coffee n 1/2 cup milk for an hr atleast.
  • Now in bowl whisk flex coffee mixture with buttermilk,oil and sugar.
  • Sieve flour with coco powder,baking powder n baking soda.
  • put steamer on high heat with atleast 2 glass water.
  • Mix above dry ingredients with wet ingredients. finally fold in crushed walnuts.If batter seems dry add the extra soya milk.
  • Pour batter in 8inch square pan.steam on medium heat for 30 minutes.
  • Let it come on room temperature then keep it rest for atleast 12 hours.
  • Cut n store in airtight container.


# you can make them using all purpose flour but the milk will be used less.

Cucumber Cake



Yea u read right..i wrote Cucumber Cake and yea its not savory but sweet like our normal cakes :P ! Packed with freshness and unusual soft texture it was really a surprise for me ! 

I was just thinking about what new can be done with cucumber other than salad,drinks,raita...thought of this and searched on google for some idea...Came to know its similar to a authentic cake recipe from our India only known as Tausali  . Well i never heard of it so,just got tips and confidence from several sites..

Finally came up with my very own healthy n unusual cake recipe..So,here i present you my Cucumber Cake with heavenly aroma of Cardamom  !



INGREDIENTS
(6" Cake)
  
1 Cup Semolina/Suji
3 tbsp Whole Wheat Flour
2 tbsp Oats
1/2 Cup Sugar
1/2 Cup Jaggery(grated)
3 Cardamom Powdered
1 Cup Cucumber(finely grated)
1 Cup Coconut Milk
2 tbsp Coconut(shredded)
1 tsp Baking Soda
1/2 tsp Baking powder
2tbsp Ghee/Oil


DIRECTIONS


  • Dry roast oats for couple of minute in a pan.
  • Mix semolina,oats,coconut(if using),cucumber,jaggery,sugar in a bowl.Add coconut milk and let it rest for an hour.
  • Now mix in ghee,cardamom powder and wheat flour.You can add some water if batter becomes too thick.
  • Finally mix in baking powder and baking soda.
  • Transfer the batter in greased baking pan.
  • Bake in pressure cooker (on very low heat) or preheated oven (at 180'C ) for 30-35 minutes or untill toothpick comes out clean from center.
  • Let it cool down for couple of hour before d molding.
  • Sprinkle some icing sugar on top and serve warm.



# Batter must not be too runny.
## You can use whole jaggery instead of sugar.
### Some roasted dry fruits can also be added.

Orange-n-Jam Pancake





Some days back i posted here my Coconut Pancakes,which were too whole wheat ! this time i tried fruity version and served them with oranges and jam instead of honey or maple syrup.. it was loved by all...

I am gonna try different versions by using other fruits very soon..Right now i am just waiting for summer for Mangoes 





This is my way to have my pancake !!


INGREDIENTS
(4-5 Pancakes)

1 Cup Whole Wheat Flour
1.5tbsp Baking powder
1 Cup Milk
1/4 Cup Orange Juice/Water
1tsp Sugar
2tbsp Jam (Orange marmaled/mixed fruit)
1tbsp Oil
2tbsp Butter(melted)
Pinch of Salt
8-10 Orange Slices(d-seeded)


DIRECTIONS

  • Sieve flour and baking powder together.
  • Mix milk,oil and juice/water,make thick batter.
  • Heat jam with 1 tbsp water for few seconds than mix in batter.
  • Finally melt the butter and mix in.
  • Heat non-stick pan,Place a ladle full batter in center and let it spread by its own.
  • When it look cooked at edges,flip and cook for another 4-5 minutes.
  • Serve hot with jam spread and orange wedges.


# Jam spread could be make by melting 4 tbsp jam with 2 tbsp water.

Pull Apart Cinnamon Sugar Bread (Whole Wheat)





I just got this name while hovering over facebook..That picture just stuck into my mind and the that you get get each pieces just pulling it out kinda excited me to make one ..I searched for the recipe and almost all were same using All purpose flour and brown sugar.But i don't know why i always run away from APF(all purpose flour) ! 


So finally i came up with my own recipe which i made after several adjustments and twisting from the recipes i got from internet...Its really easy (bit time consuming) to prepare considering its taste ! You can spread some cream icing over warm bread but i liked it without it..Its simply a sugary scented heaven kinda filling.. 





Here is my Whole Wheat Pull apart Cinnamon Sweet Bread..

INGREDIENTS
(1 Medium size loaf)

2Cup Wheat Flour(Atta)
1/2 Cup + 1tbsp Sugar(granual)
1tsp instant Yeast
1/2Cup Water
1/4Cup Whole Milk
1tbsp Milk powder(optional)
1 Egg
1.5 tsp Cinnamon powder
1/2 tsp Nutmeg powder
1/4Cup+ 1tbsp Butter
1/4tsp Salt



DIRECTIONS


  • Soak yeast with 1tbsp sugar in warm water for 10 minutes.
  • Heat milk with 1tbsp of butter untill butter just get melted.Let it come on room temperature than mix it with yeast mixture.
  • Mix Flour with milk powder and salt in a bowl.Make a well in center and pour some of water milk liquid in it.Make rough dough by adding liquid gradually.
  • Whisk the egg and add it in the dough and mix it using spatula.It will take some time to get incorporated with dough.Finally you will get a sticky dough.
  • Using oily hand just keep it in a greased bowl and leave it with close lid for couple of hour.
  • Meanwhile melt the butter in bowl and heat untill it turn into brown color.
  • Mix together sugar,cinnamon powder and nutmeg in bowl.
  • After 2 hour dough will be soft and not at all sticky.Knead it for few minutes.
  • Roll it into thick square shape on floured surface.
  • Brush the brunt butter on all over the top than sprinkle generous amount of sugar-cinnamon-nutmeg mixture over it. Cut it into equal square shape and pile it.
  • Carefully arrange these squares vertically in square baking pan.You can sprinkle some sugar on top.
  • Bake it for 40 minutes in preheated oven on 175'C.
  • Let it rest for at least 2 hour before serving.



# You can serve this with some cream glaze using butter+cream+sugar.
## If your sugar granuals are bigger in size than just grind them for few seconds to break it into smaller one.

Savory Cake



Last year i baked cakes.. ALOT !! So,this year i am just planning to take break with that...but its like addiction now to bake every now n then,may be i become bake-maniac ;)..
So,today my hand were dying to prepare the cake mix,but brain was arguing to make something healthy..first started with Carrot cake..than carrot whole wheat cake..then suddenly mind suggested why not try carrot savory cake !! So,i opened my fridge to get some carrot and again...there was whole bunch of vegetables...So,finally,i end up with this Mix-Veg Savory Cake !!! To make it lighter i thought of using semolina+whole wheat flour instead.
Very light in texture but so- so filling that make them ideal breakfast or on the go snacks..You can also store them in air-tight container for 2-3 days..




I prepared pancake from the leftover batter and it turned out nice light n fluffy snack.i simply spread some on ketchup on top and had it like roll.. :P ..so next time i ll make them for our breakfast for sure.



INGREDIENTS

2/3Cup Whole Wheat Flour
1Cup Semonina
1Cup Curd
2tbsp Butter
1 Egg
1/2Cup Water
1tsp Baking powder
1/4tsp Baking Soda
1.5Cup Mix Veggies(corn,carrot,peas,onion,Broccoli)
2 Spring Garlic/Garlic pod
Pinch of Ginger(grated)
1Spring onion(optional)
1tbsp Green Coriander
1tsp Musturd seed+Cumin seeds
4-5 Kari leaves(optional)
Pinch of Chili flacks1tsp oil
1tsp Salt

DIRECTIONS


  • Soak semolina in curd and water for 10minutes.
  • Heat 1tsp oil in pan.fry cumin-musturd seeds,garlic(chopped),garlic and kari leaves for few seconds than mix in all veggies and cook for another 2-3 minutes.Remove from heat and keep aside.
  • even though i do'nt have oven yet ! (Thanks to my engineer instinct,i can adjust temprature of cooker for baking cookies,pies,cake etc :P )
  • Seive flour,baking powder and baking soda together and mix in semolina mixture.
  • Beat egg lightly with butter and mix in above mixture.
  • Finally fold in veggies,chili flacks and salt.
  • Pour the batter in greased baking pan(6-8 inch)
  • Bake for 40minutes(or untill it passes toothpick test) in preheated oven on 175'C.
  • Let it rest for 10minutes before cutting and serving.
  • Serve with green chutney,ketchup or simply with Tea/coffee.



# Use veggies as per your liking.
## You can make eggless version too.just dont use egg..It will just make your cake bit dense but taste will not be compramised.

Whole Wheat Bread



This one is my very first bread loaf which i made just now. Loved the texture and taste of it ! n its healthy too as made with whole wheat flour and i used honey instead of sugar.Surely gonna make them soon again.
You can make the dough in advance and store in fridge to bake it later.just make sure to bring the dough at room temperature before baking.
I brushed to top of my loaf with some egg white a sprinkled sesame seeds to make more intresting. You can skip this completely.






INGREDIENTS
(1 Loaf)

1Cup Whole Wheat Flour
1/2Cup+2tbsp All purpose Flour
1/2tsp Dry Yeast
1/4Cup Water
1/2Cup Milk
1/2tsp Salt
1tbsp Honey
2tbsp Butter/Olive oil

DIRECTIONS


  • Mix yeast in lukewarm water with honey for 10minutes untill it becomes frothy.
  • Add all purpose flour,salt and butter.Mix well.
  • Add milk and mix than add wheat flour and make a dough.Use extra fine flour to avoid it from sticking in pan.
  • Cover with damp cloth or cling sheet and leave it in damp place of kitchen for 2-3 hour.it will be double in size.
  • Kneed the dough and place it in baking pan.Leave it covered for another 1 hour. 
  • Bake it in preheated oven on 180'C for 40-45 minutes.Let it rest for 10-15 minutes and its ready to serve.


# To make it vegan,just replace milk with almond milk.
## You can prepare dough and store in fridge.Just bring it to room temperature before baking.

Chapati Noodles



Its best trick to use leftover roti/chapaties.and its a very healthy n filling to take as breakfast ! It can be made in many version like southindian style or north indian style but i like indo-chinese style one...some time i specially make some roti to make this. :P You can add any veggies or even eggs as per your taste buds !






INGREDIENTS
(Serves 3)

4 Roti/Chapaties
1 Onion
2 Green Chilies
2-3 Garlic
1/2tsp Ginger(fine chopped)
1Cup Cabbage (shredded)
1/2cup Carrot (shredded)
1 Capsicum (thinly chopped)
2-3 Beans (chopped)
1Cup Baby Spinach(optional)
1tsp Soya Sauce
1/2tsp Ajinomoto
1/2tsp Vinegar
1tbsp Tomato Ketchup
1tbsp Oil
1Cup Roasted Peanuts(optional)
Salt to taste

DIRECTIONS


  • Cut Roti/chapaties in thin strips with knife and keep aside.
  • Heat oil in pan.Add chopped onion,garlic and ginger,saute for minute.
  • Add all veggies and fry on high heat for 2 minutes.
  • Add all sauce,salt and cook the veggies on low heat till its tender.
  • Finely add roties and mix properly.and remove from heat.
  • Mix roasted peanuts and Serve hot.


# You can add some water before adding roti,if roti are tight in texture.
## If you like crunchy veggies than no need to cook them on low heat.
### You can add garam masala and tomatoes instead of sauces to make indian version.

Coconut Cookies



Whole Wheat,Honey,Coconut,Eggless !!! what else you need to get motivated to  make these sweeties ;) ..  Can be made anytime as very less work is required ! :)






INGREDIENTS
(10 cookies)

1Cup Whole Wheat Flour
1/2Cup Coconut(powdered)
1tbsp Sugar(powdered)
2tbsp Honey
1/4tsp Baking powder
1/4Cup Oil/Butter
1/4tsp Cardamom powder
2tbsp Milk


DIRECTIONS
  • Preheat oven on 150'C
  • Sift flour and baking powder together.
  • Mix milk and honey properly by using fork.
  • Mix sugar and oil properly.Add cardamonand coconut,mix again.
  • Finally add flour and knead properly with milk.
  • Leave it on room temprature for 10 minutes.
  • Roll it in 1-1.5 inch thick sheet and cut in desired shape.
  • Bake for 20minutes on middle rack.
  • Remove from oven and let them rest for a while.
  • Store in airtight container.



# You can replace cardamom by vanilla essence.
## Adjust sweetness as per your liking.

Whole Wheat Cookies/Nankhatai



"Nankhatai",as far as i know,everyone loves them !! ;) including me..i still remember when mom use to bring them while coming back from shopping :) ...Today i tried to make them bit healthier by using wheat flour instead of fine flour.(person like me who have big big sweet tooth,need this :P) result was dense yet tasty cookies !






INGREDIENTS


1Cup Whole Wheat Flour
1/3Cup Sugar(powdered)
1tbsp Cornflour
1/4tsp Baking powder
1/3Cup Oil/Butter
1/8tsp Nutmeg powder
1/4tsp Cardamom powder

DIRECTIONS


  • Preheat oven on 150'C
  • Sift flour and baking powder together.
  • Mix sugar and oil properly.Add cardamon and nutmeg,mix again.
  • Finally add flour and knead properly.Leave it on room temprature for 15minutes.
  • Make 12 balls from dough and bake for 20minutes.
  • Remove from oven and let them rest for a while.
  • Store in airtight container.

Zebra Cake



There use to be some time when you feel proud of your self.it can be very small things like this cake...Seriously i felt so good when i have seen and tasted the final result of this recipe..Now a days m trying to create recipe which can be healthy with great taste.This one is surely one of them.I used whole wheat flour instead of refined flour.used just 1egg and in instead of 3/4 cup sugar,i used just 1/4cup sugar n 4 sugar-free pills !!

INGREDIENTS

1.25cup Whole wheat Flour
3/4cup Sugar(or 1/4cup sugar+4sugar free pills)
1Egg
1/4cup Oil/Butter
2tbsp Orange juice
2tbsp Coco powder
2tbsp Milk
1tbsp Baking powder
1tbsp Cornflour 
1tbsp Fine Flour
1tsp Espresso coffee


DIRECTIONS


  • Blend egg with sugar till it become creamy then add oil and blend again for few minutes.
  • Swift wheat flour,fine flour,cornflour and baking powder together and fold in with egg mixture.
  • take half of the mixture in separate bowl.
  • Now in first bowl add orange juice and mix well.
  • In second bowl add coco powder,milk n coffee mixture and mix well.
  • In 8" baking tin(greased),pour 2tbsp of cake mix from first bowl,before it spread pour 2tbsp of cake mix from second bowl. Do not stop and wait until the previous batter spreads. Alternate the batter until you finish them. 
  • Place the cake tin in the cooker and close the lid. Do not place the weight/whistle.Bake in the cooker first on High flame for 5 minutes then low flame for 20 minutes and again medium flame till the cake is done. Remove from the cooker.Invert the cake onto a plate/ rack. Turn the cake back over and let cool. 


# you can skip orange juice if you want.

Choco-Coconut Cake


U can call it Diet cake too..as it contains very less fat,sugar and no fine flour(maida).Yes ! I made this with whole wheat flour.I added grated coconut in original recipe,thus you will get a very dense yet soft cake !


INGREDIENTS


3 tbsp cocoa powder (unsweetened)
2 tbsp chocolate paste
1 cups flour / whole wheat flour
1 tbsp baking powder
1 tbsp corn flour
1/4 tbsp vanilla essence
2 tbsp milk powder
Pinch of salt
1 egg
3/4 cup thick coconut milk
1 tbsp oil/butter
1 tbsp expresso coffee
1/2 cup Sugar
5-7 crushed cashews/Almonds
2tbsp Coconut (grated)



DIRECTIONS



  • Preheat oven at 180°C exactly 10 mins before baking. Grease the pan with oil/butter. Place a butter paper Or parchment paper at the bottom.
  • Sift flour, corn flour, salt, milk powder,baking powder. Keep it aside.
  • Take thick coconut milk in a wok and place on low heat for about 3-4 mins. 
  • Now mix coffee, cocoa powder, chocolate paste. Stir well until all blends nicely. Keep this mixture aside. 
  • In the meanwhile cream oil / butter and sugar until light and fluffy. Add egg and beat until all combines well.
  • Add coffee-cocoa-coconut milk mixture. Now beat this mixture for 3 to 4 mins on medium speed. 
  • Mix dry with wet ingredients. Fold the mixture nicely.Lastly add crushed nuts,grated coconut, vanilla essence.
  • Bake at 180°C for about 40 to 45 mins Or until it starts leaving the edges of pan Or until skewer comes out clean.Allow the cake to cool. 
  • Chill in the fridge. Serve chilled on a platter with a dollop of icecream.



#Just ensure the coco-coffee-coconut milk mixture should not be warm else your egg will start cooking.
##You can reserve about 3 tbsp mixture for the cake icing from coco-coffee-coconut milk mixture
