Semolina Date Cake

This cake is very very simple.original recipe was not asking for roasting the semolina but i did n it turned out so good ! You can make variation with making vanilla essence in spite of cardamoms.


1Cup Semolina
1/3Cup Sugar
6-7 Dates
1Cup Milk
2 Cardamoms (powdered)
1tsp Baking powder(i used double action)
2tsp oil
1tsp Ghee
5-6 cashew


  • Soak dates in warm milk for 15minutes than grind it roughly.(u can chop it too)
  • Roast the semolina on medium heat for 6-7 minutes till it turns golden colour.
  • Mix all ingredients together.transfer batter in baking dish and top it with crushed cashews.
  • Bake at 180'5 for around 25-30 minutes.(after 20 minutes,keep checking till cake passes knife test)

# This cake will not rise very much,but will turn out really soft.

Hara Gosht


1/2kg Mutton
1 Onion
2tsp Ginger Garlic paste
1tsp Cumin seeds
1' Cinnamon stick
10 Black pepper
6-7 Clove
2 Black Cardamom
3 Green Cardamom
Pinch of Nutmeg
1/2tsp Red chili powder
1tsp Coriander powder
1/2cup Mint leaves
1cup Green coriander
5 Green Chilies
1tbsp Oil


  • Make fine paste of onion and whole spices with 1tbsp of water.
  • In heavy bottom pan heat oil.Add above paste and fry on lowest heat for 10-15 minutes.It will leave oil.
  • Add Mutton and fry on high heat for 7-8 minutes then add coriander powder,salt and 1cup of water.Cook till its tender.
  • Make paste of coriander leaves,mint leaves and green chilies.
  • Mix above paste in mutton and mix well.cook on lowest flame for 2-3 minutes and serve hot with Roti or Rice.

Karahi Chicken

This one is one the must have recipe.You can use boneless chicken to make it in half time.


1 Chicken (normal size pieces)
2 Medium Onions(finely chopped)
1Onion (cubed)
2 Tomatoes (paste)
1Tomato (cubed)
1 Capsicum(cubed)
4 Green Chillies
1 tbsp Ginger, Garlic paste
5 Cardamoms 
7-8 Whole black Pepper
5 Cloves
1inch Cinnamon stick
1 tsp Cumin Powder
1 tsp Coriander Powder
1 tsp Turmeric Powder
1 tsp Red Chilli Powder 
1 tsp Smoked Paprika Powder
1tsp Kasoori methi
Salt to taste
1.5tbsp Oil
Coriander to Garnish


  • Heat oil in Heavy bottom pan and add finely onions.Fry them on medium heat. 
  • Add cardamoms, cloves,cinnamon and pepper.
  • Fry well until onion become golden. Add ginger-garlic paste n fry it for 3 to 5 mints more.
  • Than add chicken fry it on high heat for 7-8 minutes.
  • Add tomatoes paste than add cumin, coriander powder, turmeric powder, red chili powder,salt, smoked paprika mix and cook on medium heat till its done.
  • Cook on high heat until it leaves oil.(it will take around 5minutes)
  • Finally add in the capsicum, green chilies,tomato,onion,kasoori methi.Close the lid and cook on lowest heat for 10 min. 
  • Garnish with coriander and serve hot with Bread of your choice.

#Normal paprika powder.but smoked one will give rich color.

Chocolate pudding Cake

I was searching for perfect recipe for pudding cake for a while and finally come up with this.Its very easy to make and eggless too !

1 cup flour
3/4 cup sugar
2 tsp baking powder
1/2 tsp salt
2 tbsp cocoa
1tsp Coffee powder
1/2 cup milk
2 tbsp melted butter

1 cup brown sugar
1/4 cup cocoa
1-3/4 cups Hot Coffee


  • Mix all dry ingredients well.
  • Stir in milk and butter until well mixed.
  • Transfer this in 9" baking tin.
  • Sprinkle sugar and coco on top than carefully spread hot coffee over it with the help of spoon.
  • Place this in preheated oven(180'C) for 30minutes.
  • Check the cake by pressing it.it should be bouncing back.
  • Cool it down for 5minutes.
  • Sprinkle icing sugar and Serve either warm or cold as per your like.

#Add more milk if required as batter must not be very thick.
## Must use good quality cocoa powder.

Tangy Tomato Chicken

One of my best recipe so far and sure hit.Just try and you will never regret !!


1kg Chicken
2 Onion
10 Garlic
1.5" Ginger
6-7 Whole Red chilies
1Black Cardamom
2Green Cardamom
5-6 Cloves
1tsp Cumin seeds
1tsp Coriander powder
1tsp Fennel seeds
1" Cinnamon
Pinch of Nutmeg
2 Bay Leaves
4 Tomatoes
1 Lemon
2 Lemon Zest
1tbsp Oil
Salt to taste


  • Marinade chicken with lemon juice,lemon zest,coriander powder,4garlic and .5'ginger paste and 1tsp salt for 1hr.
  • Soak chilies in warm water for 10minutes and make paste.
  • Make fine paste of remaining ginger,garlic,1onion and whole spices.
  • Cut the top of tomatoes and put it in boiling water for 5minutes.Remove them from water and peel the skin.Chop it roughly and keep aside.
  • Heat oil in heavy pan.Add bay leaves than finely chopped onion.Saute till it turns pink.First add red chili paste,mix well and after 1minute add masala paste.cook on low heat for 15minutes.
  • Add chicken and fry on high heat for 5minutes.
  • Low the flame and cook for 15minutes.
  • Add chopped tomatoes.Cook till its tender.
  • Remove from heat and serve hot with roti or rice.

# The key of taste is whole chilies.DON'T use chili powder.
## Adjust the gravy as per your requirement.But don't add more than 1cup water.

Caramel topped Semolina Cake

This one is very easy recipe,which i got from book of Dorie Greenspan...and gives totally different taste as cake..So if you are feeling bore by baking same flour cakes(like me..) than go for this.Its very dense and soft.You can make many variation in this too...Next time i am gonna try cardamom flavor instead of vanilla.In this i added chopped almond in original recipe.


2Cup Milk
2tbsp Semolina
2tbsp Sugar
1/8tsp Vanilla essence
1-2tsp Almonds(optional)
2tsp Raisin
1 Egg
Pinch of Salt

1/2Cup Sugar
1tsp Lemon Juice(optional)
1tsp Water


  • Boil milk in heavy bottom pan.Add semolina and stir till it become thick.Remove from heat and add sugar.Keep aside to get cool.
  • Meanwhile,In a pan add sugar,lemon juice and water.Put on high flame and caramelize it.Remove from heat and transfer in baking dish(8"),Sprinkle finely chopped Almond.Let it get set for 5minutes.
  • Add lightly beaten egg,raisin and vanilla essence in semolina mixture and mix well.
  • Transfer this mixture in baking dish over the set caramel.
  • Bake for 20-25 minutes on 350'F(180'C).Let it cool down for 5minutes than d mold carefully.
  • Serve warm or cold.

# Keep an eye on cake after 15minutes while baking..Otherwise it will lost its white color.
## According to your taste you can reduce sugar in semolina as caramel will increase the  sweetness finally.
### I have not added lemon juice in caramel.
#### You can add some nutmeg powder/cardamom powder for variation too.

Baigan Bharta

A very simple dish for simple meal.You can get this in any home of eastern U.P.I never liked this as a kid but now i love it !Generally people use raw garlic and tomatoes but i like them roasted as it gives a nice smokey flavor.

2 Eggplants(round shape)
3-4 Potatoes boiled(medium)
1 Onion(chopped)
2-3 Green chilies
2 Tomatoes
3-4 Garlic 
1/2' Ginger
1/4tsp Panch foran
1tsp Green Coriander
2tsp Mustard Oil
Salt to taste


  • Roast the eggplants and tomatoes over Low heat on gas flame and remove there skin.
  • Heat a flat pan and roast garlic too for 2minutes.Peal and chop finely.
  • In deep pan heat mustard oil.Add panch foran,onion and saute till it becomes pink.
  • Add finely chopped ginger,roasted garlic,green chilies.Saute for 1minutes.
  • Add Roasted tomatoes,salt and fry on medium heat till all mix well and mashed up.
  • Add crumbled boiled potatoes and eggplants.Saute for 4-5 minutes on medium heat.
  • Finally add green coriander leaves.Fry nice.
  • Serve hot with ghee roti,dal,Rice.

# You can use raw garlic and tomatoes.
## if eggplant seems bit raw from inside just cook final dish on low heat with closed lid.

Polo Rojo/Coco Chicken

Around 3years back i have seen a movie 'Chocolate',in which actress has thrown a party n served whole chicken(or turkey) with chocolate sauce ! that looked super sexy.That scene got stuck in my mind,So...after all those year yesterday i searched alot about this kind of recipe and came up with this,"Polo Rojo",an Spanish dish which goes well with Rice(not with roti).Chocoa gives a very nice/different aroma to whole dish.So if you want to try some thing unusual,Try this.


1/2Kg Chicken 
4-5 Garlic
1tsp Red chili powder
1/2tsp Black pepper powder
1/2tsp Cumin powder
1/2tsp Chili flacks
1/2tsp Oregano 
1/2tsp Coco Powder(unsweetened) 
1tsp Flour
1tbsp Oil
Salt to taste


  • Marinade chicken with some black pepper and salt.
  • Heat oil in deep pan.Add onion and garlic,Saute till it turns pink.
  • Add Chicken,Fry for 5minutes.
  • Add 1Cup water,Tomatoes,cumin powder,chili powder,oregano,pepper powder,coco powder.
  • Cook on low flame 15-20 minutes.
  • Mix flour with 1tbsp of water and add this in gravy.
  • Cook on high heat for another 5minutes.
  • Garnish with chili flacks and serve hot with Rice.

# Adjust your gravy as per your taste buds.

Green Chili Chicken

Again this recipe i got from Food Food channel,Sanjeev Kapoor show.I made some changes as per our taste buds,and it turned out delicious yet light for tummy !

1 Kg Chicken
15 Whole Green Chilies
2 Onion(medium)
10-12 Garlic
1' Ginger
1Cup Coriander leaves(with stem)
1tsp Garam Masala powder
1tsp Turmeric Powder
1tsp Coriander Powder
1tbsp Oil
4-5 Black pepper
3-4 Clove
1tsp Cumin seeds
Salt to taste


  • Blend 5 Chilies,coriander leaves,onion,ginger,garlic and salt together into fine paste.
  • Marinade chicken with above green paste for atleast 1hr.
  • Heat oil in heavy bottom pan.Add cloves,cumin seeds and pepper.After few second add turmeric powder then marinated chicken and remaining green chilies.Fry for 10minutes on high heat.
  • Add coriander powder,garam masala and 1cup water.Let it cook on low heat for 20 minutes.
  • Garnish with green coriander and serve hot with roti.

# Don't worry about chilies,as it will give just very nice aroma but not making dish over hot !
## Add some coconut in gravy to make it bit mild in taste.
