Oats Cake with coconut glaze

 

Well if you got giant sweet tooth like me and a baking bug in your head than you got to keep eye on what you do in kitchen ..Now a days i try to experiment with healthier ingredients..Right now my total attention os on Oats  ( as i need to finish packet full before leaving home for another trip )

Some days back i prepared savory oats now it time for some baking with them... Over internet i found some idea about cake with coconut topping...I changed many things in it and came up with my very own cake totally healthy as it contain oats,whole wheat flour,brown/white sugar,milk with no butter !

A warm slice !

The cake was really moist,light and crumbly..I made it very light sweet as glaze compensate the sweetness..But you can adjust the sweetness as per your buds.



INGREDIENTS
(6' Cake)

3/4 Cup Oats(quick)
1 Cup Whole Wheat flour
1/2 Cup Sugar(white/brown)
1tsp Vanila essence
1tsp Baking powder
1/8 tsp Baking Soda
1 Egg
2tbsp Oil
1/2 Cup Milk

For Coconut Glaze
1tbsp Butter
2tbsp Cream
1tbsp Milk
2-3 Tbsp Roast coconut flacks
2tbsp Sugar


DIRECTIONS

  • Preheat the oven on 180'C.
  • Mix oats and oil together in a bowl and add boiled milk in it.Let it rest for 10 minutes untill its cooled down.
  • Add eggs,vanila essence in it and mix properly.
  • Sift flour with baking powder and soda in another bowl.Mix them into oats mixture.
  • Mix properly,you can add 1/4 cup water if batter is too thick.
  • Line the baking dish with paper and transfer the batter into it.
  • Bake for 20-25 minutes.untill toothpick comes out clean from center.
  • Meanwhile for glaze,heat butter on low heat in a pan.Add cream,sugar and milk,mix well and remove from heat.
  • Now mix coconut flacks mix for 2-3 minutes.
  • Let the cake rest for 5 minutes.Poke the top with toothpick.
  • Now spread the coconut glaze all over the cake evenly.Let it cool down for 2 hours.
  • Serve warm !



# If you want sweeter cake,use 3/4 cup of sugar.
## Its crumbly cake so,lining baking tray is must.also d mold only after cake get cool down.

Coconut Monkey Bread


i prepared this couple of months ago,just after i tried my Cinnamon pull apart bread..i just wanted to try something interesting and different taste..i heard of monkey bread over internet.i think the name if because you can just pick up the pieces from bread like monkey ...all of them were having similar flavors..but i wanted to make it with something new...Finally dared to come up with this which turned out simple delight for any coconut lover ! 



So here is my very own recipe of Coconut monkey bread..i used same recipe for bread dough i  used in cinnamon bread..i also sprinkled leftover coconut sugar on top witch gave a really nice crust ! So,just go ahead and try this out...







INGREDIENTS

2 Cup All Purpose Flour
1/2 Cup + 2 tbsp Sugar(granual)
1 tsp instant Yeast
1/4 Cup Water
1/4 Cup Coconut Milk
1tbsp Milk powder(optional)
1 Egg
1/2+1tbsp Cup Coconut(powdered)
1/4 tsp Cardamom powder
1/4Cup +1tbsp Butter


DIRECTIONS


  • Soak yeast with 2 tbsp sugar in warm water for 10 minutes.
  • Heat milk with 1tbsp of butter untill butter just get melted.Let it come on room temperature than mix it with yeast mixture.
  • Mix Flour with milk powder,1 tbsp coconut powder and salt in a bowl.Make a well in center and pour some of water milk liquid in it.Make rough dough by adding liquid gradually.
  • Whisk the egg and add it in the dough and mix it using spatula.It will take some time to get incorporated with dough.Finally you will get a sticky dough.
  • Using oily hand just keep it in a greased bowl and leave it with close lid for couple of hour.
  • Mix together powdered sugar,coconut powder and cardamom powder in bowl.
  • Melt the butter in bowl and heat untill it turn into light brown in color.
  • After 2-3 hour dough will be soft and not at all sticky.Knead it for few minutes.
  • Pull out the small rough chunks from dough and keep aside. 
  • Grease the baking dish.
  • Now take one dough chunk,brush it with butter then roll it over coconut sugar mixture.Place it in baking dish.similarly do it with all remaining chunks and place over each other in baking dish.sprinkle remaining coconut sugar mixture on top of it.
  • Leave it on room temperature for next 15 minutes.
  • Bake it for 40 minutes in preheated oven on 175'C.
  • Let it rest for at least 2 hour before serving.

#May be i ll try it with coconut oil for even more intense flavor !
## Use sugar as per your sweet tooth.

Rice Dumpling in Coconut Sauce (Paal Kozukattai)



It first of feb an from morning i was waiting for the mail from SNC group to see what is coming for us as
challenge from South team.Its funny sometimes that there is so-so much vast collection of recipes we have in India .Its very well said," yahan har 20km pe pani aur 20mile pe bhasha badalti hai" (on every 20km water will change and on every 20 mile language !) 



So here is another recipe which i came across just now through this challenge as Rice Dumplings in Coconut Sauce(Paal Kozukattai) by Tamilarasi .After a bit research i came to know that its a very famous desert from South India as well as of Thai cuisine.I just now prepared this and came out nicely..Specially i loved the coconut...sauce may be next time will try some coconut milk firni !  As i was making this first time.So just prepare in very small quantity(just one small bowl).now its already half gone into my tummy,remaining i somehow managed to store for Pankaj !(still m not sure he will get or not  )
I used canned coconut milk so for boiling dumpling i mixed some with water.You can use second extract for boiling if going to use home made coconut milk.


Here is the Recipe:

INGREDIENTS
(1 Bowl )

1/2 Cup Rice Flour
1.5 Cup Warm Water
1 Cup Coconut Milk(thick)
1 tbsp Sugar
1 Cardamom(powdered)
1 tbsp Dry Coconut Flacks(optional)


DIRECTIONS
  • Knead soft dough of rice flour by using some warm water.Make pea size balls from it and spread on muslin cloth to get dry for around 1-2 hours.
  • Boil remaining water with 1 tbsp of coconut milk.Add dried balls and don't stir for 1-2 minutes.
  • Let them cook on medium flame for 5-6 minutes.
  • Add coconut milk,sugar,cardamom powder and cook for another 2minutes.Remove from heat.
  • Garnish with coconut flacks and serve warm or cold.(prefer cold)

# Rice must be supar fine(if u are planning to make it at home)
## Adjust sweetness as per your taste buds.
### You can add 1/2 cup milk to make heavier version.
