Oats-n-flexSeed Garlic Bread



This bread comes out as quit a surprise..I started with simple whole wheat bread but gradually idea's keep coming in mind n started adding things here n there..Finally the product was one handsome n healthy Bread loaf which is quit crusty outside yet light n tender from inside..exactly how it should be !!





The best part is that its very easy to prepare..Just mix all ingredients,let them rise,punch down,rest again,bake n voila ! your bread is ready..easy hah !! now just toast it with some butter n njoy !! You can make it without any flavor or try adding some other flavor(like nutmeg,cinnamon,rosemary,oregano.. etc)..go on n be wild !!

Here is the recipe 


INGREDIENTS

2 Cup Whole Wheat Flour
1/4 Cup Oats
3 tbsp Flex Seeds
1tbsp Instant Yeast
1/2 Cup Water
1tbsp Oil
1tsp Sugar
1/4 tsp Salt
4 Garlic clove
1/2 tsp Chillli flacks



DIRECTIONS

  • Warm water,mix in yeast n sugar.Let it rest till its become frothy (around 5-8 minutes).
  • In a bowl mix flour n salt.Pour yeast water n mix with a spoon.It ll be sticky dough.
  • Transfer dough in greased bowl.Keep in some warm place covered for couple of hour.It ll become double in size.
  • sprinkle some flour on platform n Transfer the dough on it.spread outs n flex-seed all over it.Plunch it down and knead for a minute.Now add finally chopped garlic n chilli flacks,knead for another minute.
  • transfer it in greased baking tray or tray.Let it rise again for an hour.
  • Bake it in preheated oven on 170'C for 30-35 minutes.

Oats n Wheat Chocolate Bread

This is my post after almost 4 months...verry hectic 4 months !!!But during those days i never stopped cooking. I was doing  my bits n clicking pictures and waiting for my vacations to upload all..Finally here i am with lots n lots of recipes n their pictures in my draft ! 

I am starting with this amazing bread which any one can enjoy..even you all calories counting ladies like me ..also go head surprise your kids with this tasty nutty almost like brownie like bread without any guilt !
Try it n u ll thanks me for sure for this !

I added bornvita too which gives it a dense brownie like texture..but its totally upto you to add or omit it.

INGREDIENTS

1Cup Whole Wheat flour
1/2 Cup +2 tbsp Oats
2tbsp All Purpose Flour
3tbsp Oil
2tbsp Cocoa Powder
1tbsp Sugar
4tbsp Bornvita
1/2 Cup Honey
1 Egg
1tsp Baking powder
1/8 tsp Baking soda


DIRECTIONS 
  • Grease 6 or 8 inch baking pan with few drops of oil.dust its sides n bottom with 2 tbsp of oats n keep aside.
  • Whisk egg n powdered sugar together for a minute,Add oil n honey n mix well.Mix in bornvita and 1/2cup oats too.
  • Sieve both flour,baking soda n powder.cocoa powder together twice.
  • Mix dry ingredients with liquid mixture properly.
  • Pour batter in ready baking pan n bake it in 170'C for 30 minutes or till knife comes out clean.
  • Let it come on room temprature before cutting slice.
  • Store in airtight container.


# I added some almond flakes in batter.walnut will taste good too.
## Bornvita is optional but i ll recommend it.If not using than check sugar quantity.
### If batter seem very dry,add some milk.

Banana Bread



I was planning to make this from quite a while now..finally baked this arround a month back.but somehow was not in position to upload the recipe here..I must tell,its one of the moistest(is that even word !!..whatever..) cake i ever made !! n must try for banana lover !
Also i loved the picture of this bread !!

i had some left over batter..so i just tried steaming it as cupcake !....and look what the result is !!!

just melt in mouth CupCake ! 
So after all this photoshoot,lets come to the recipe...

INGREDIENTS

1.5cup All purpose Flour
2 Banana(over ripe)
1/4cup oil
2 Eggs
1/2Cup sugar(powdered)
1.5tsp Baking powder
.5tsp Baking Soda


DIRECTIONS

  • Mash bananas in a bowl.mix in eggs one at a time.
  • Whisk in oil n finally sugar..whisk for 2minutes.
  • Seive dry ingredients together in the wet mixture.Fold in properly.
  • Bake on 180'C for 30minutes.
  • Do toothpick test.
  • Let it rest for atleast 1hr.serve warm

# This is strictly for Banana lovers !
## I topped my cake with chopped nuts.

Date Loaf (Eggless)



i come home just for 5-6 days...again i have to buy stuffs just for these few days and have to sort out all leftovers before leaving again....i usually store several kinds of dry fruits,juices etc for Pankaj whenever i go on my trips..This time he left all the dates as it is as i left them in box..so now i had a task to finish them of before leaving....What can we make with them in so less time ??? Can go for date Loaf..BUT i don't have eggs and butter !!! So what i can try my hands on eggless loaf !!
Taddaaa.... rightnow its in my pressure cooker baking to perfection :) (yea u heard right,baking in pressure cooker)

I personally don't like dates chunks in my loaf or cakes..but if you like feel free to add some in yours with nuts :) While mixing my ingredients i just noticed a half packet of chocolate stones and threw some in final batter ! 

You can spread some chocolate spread like me to make your slice even more sinful  !!




INGREDIENTS

1.2 All Purpose Flour
1/4 Cup Sugar
1/2 Cup D seeded Dates
1 tsp Baking Soda
1 tsp Baking powder
1/4 Cup Oil
1/4 Cup Water
1/2 Cup Milk
6-7 Almonds
1/8 tsp Nutmeg + Cinnamon powder
2 tbsp Chocolate chunks(optional)


DIRECTIONS
  • Take sugar,water,dates in a pan and place it over heat.Cook till dates turn mushy and soft.
  • Remove from heat,add milk,oil and baking soda in it.Mix properly.Let it cool down than blend  it into paste.
  • Sieve flour with baking powder and spice powder together twice in a bowl.
  • Mix date paste into flour make thick batter.(you can add bit of water if its too thick)
  • Finally mix in crushed almonds and chocolate chunks(if using).
  • Bake on 180'C for 30 minutes,check with knife.
  • Let it cool down before cutting.

# You can use other nuts too.
## Don't make batter too runny otherwise nuts will sink into the bottom.

Coconut Monkey Bread


i prepared this couple of months ago,just after i tried my Cinnamon pull apart bread..i just wanted to try something interesting and different taste..i heard of monkey bread over internet.i think the name if because you can just pick up the pieces from bread like monkey ...all of them were having similar flavors..but i wanted to make it with something new...Finally dared to come up with this which turned out simple delight for any coconut lover ! 



So here is my very own recipe of Coconut monkey bread..i used same recipe for bread dough i  used in cinnamon bread..i also sprinkled leftover coconut sugar on top witch gave a really nice crust ! So,just go ahead and try this out...







INGREDIENTS

2 Cup All Purpose Flour
1/2 Cup + 2 tbsp Sugar(granual)
1 tsp instant Yeast
1/4 Cup Water
1/4 Cup Coconut Milk
1tbsp Milk powder(optional)
1 Egg
1/2+1tbsp Cup Coconut(powdered)
1/4 tsp Cardamom powder
1/4Cup +1tbsp Butter


DIRECTIONS


  • Soak yeast with 2 tbsp sugar in warm water for 10 minutes.
  • Heat milk with 1tbsp of butter untill butter just get melted.Let it come on room temperature than mix it with yeast mixture.
  • Mix Flour with milk powder,1 tbsp coconut powder and salt in a bowl.Make a well in center and pour some of water milk liquid in it.Make rough dough by adding liquid gradually.
  • Whisk the egg and add it in the dough and mix it using spatula.It will take some time to get incorporated with dough.Finally you will get a sticky dough.
  • Using oily hand just keep it in a greased bowl and leave it with close lid for couple of hour.
  • Mix together powdered sugar,coconut powder and cardamom powder in bowl.
  • Melt the butter in bowl and heat untill it turn into light brown in color.
  • After 2-3 hour dough will be soft and not at all sticky.Knead it for few minutes.
  • Pull out the small rough chunks from dough and keep aside. 
  • Grease the baking dish.
  • Now take one dough chunk,brush it with butter then roll it over coconut sugar mixture.Place it in baking dish.similarly do it with all remaining chunks and place over each other in baking dish.sprinkle remaining coconut sugar mixture on top of it.
  • Leave it on room temperature for next 15 minutes.
  • Bake it for 40 minutes in preheated oven on 175'C.
  • Let it rest for at least 2 hour before serving.

#May be i ll try it with coconut oil for even more intense flavor !
## Use sugar as per your sweet tooth.

Vampire's Bread



I made this some days back on Sunday ..usually we use have bread jam as breakfast way back in childhood time..n we still love them.This time i just thought,why not make bread with jam stuffing !! then as a dare i decided to make braided one..  
Right from the beginning,i was thinking of the appropriate name for this but as soon as i cut this freshly baked bread and melted red jam started oozing out,i got my name VAMPIRE'S BREAD !! 



I used my usual bread recipe.While making this main thing to keep in mind is that bread dough must not be too thin while stuffing otherwise jam will ooze out while baking and will make it messy.(its ok if little bit crack comes while baking like mine ).


INGREDIENTS

1.5 Cup All purpose flour
1 tsp Yeast
1 tsp Sugar
1/4 tsp Salt
1 tbsp Oil
1/2 Cup Milk
1 Cup Jam(i used mixed fruit)
2 tbsp milk or 1 egg white for brushing top

DIRECTIONS


  • Mix yeast in luke warm milk and leave it for 10 minutes.than add sugar and oil and mix well.
  • Mix both flour and salt in a bowl,make a well in center.Add milk mixture and make a soft dough using greased hand.Leave the dough covered in kitchen for 1 hour.it will become double in size by this time.
  • Divide the dough in 3 equal parts.Take one at a time,roll it into (1 inch thick) log shape.Spread 1.5 tbsp jam in center and seal the edges using some water.
  • You will get 3 jam filled logs.Now stick their 1 edge together.then loosely braid them carefully and stick their another edge.(pictorial presentation is in below picture)
  • Place it carefully on baking pan,brush the top with egg white or milk and bake for 20-10 minutes on 170'C.
  • Let it cool down completely before cutting.

# I filled mixed fruit jam as its our favorite..you can use any of your choice..

Chicken-Mushroom Stuffed Braided Bread


I am a new bie in baking breads..and this one was my second one :)... i wished to make this from very long time and finally i done it !! I Just loved the aroma coming frommy kitchen while making this....


 I make the chicken stuffing..You can make vegetarian version like paneer,tofu or mixed veg or spinach etc etc ...i ll soon make these too... ! May be i will try with some leftovers too.. ;)



INGREDIENTS

Bread:
1Cup All purpose flour
1/2Cup Whole Wheat Flour
1/2tsp Yeast
1tsp Sugar
1/2tsp Salt
1tbsp Oil
1/2Cup Milk

Stuffing:
1/2Cup Chicken(shredded)
1/2Cup Mushroom(finely chopped)
2tbsp Onion(chopped)
1-2 Garlic
1/2tsp Garam Masala
1/2tsp Chili flacks
1tsp Green coriander leaves
Salt to taste
1tsp Butter/Oil
1Egg
1/2tsp Sesame seeds


DIRECTIONS

  • Mix yeast in luke warm milk and leave it for 10minutes.than add sugar and oil and mix well.
  • Mix both flour and salt in a bowl,make a well in center.Add milk mixture and make a soft dough using greased hand.Leave the dough covered in kitchen for 1 hour.it will become double in size by this time.
  • Meanwhile,heat butter in a pan.Saute garlic and onion for 2minutes.add mushroom and chicken.Cook on medium heat for 5-6 minutes.Mix garam masala,chili flacks and salt.Finally remove from heat and mix coriander leaves.Let it cool down.
  • Roll it into a rectangular sheet of 1inch thick around.Place the chicken-mushroom stuffing in center.Follow below picture to make braided bread.
  • Place the bread on baking tray.Brush it with egg white,sprinkle some sesame seeds on top.Bake it in preheated oven on 180'C for 40 minutes.
  • Serve warm and enjoy !


# Make sure stuffing is dry otherwise bread will become soggy.
