Crispy Fried Fish


I made this last night just before our dinner.. As we are only two and every time he brings more then required fish for meal..i think its his way to get fish in different forms 
Generally i prepare pan fried fish in usual way..this time i added some more spices and also crispy coating..It turned our total delight ( i mean what can go wrong with fish fry  )




I marinated the fish for around 3-4 hours but i think more is better..so next time i will prefer overtime.MAke sure your oil is not very hot otherwise u will end-up burnt skin.

Freshly fried 

Perfect flacks with nice crispy coating  !

INGREDIENTS

1/2 Kg Fish (pieces)
1.3 tbsp Ginger-Garlic Paste
1tbsp Vinegar
1tbsp Lemon juice
1tsp Chili powder
1/2tsp Turmeric powder
1/4 tsp Black pepper powder
1/2tsp Garam Masala
2 Eggs
2 Cup Bread crumbs
Oil for deep frying


DIRECTIONS
  • Mix all spices with lemon juice and vinegar to make thick paste.Marinade fish in this mixture for 2 hours atleast.
  • Whisk both eggs slightly in bowl.
  • In a separate wide bowl keep bread crumbs ready.
  • Take one fish at a time.Dip it in egg then carefully place it into breadcrumbs bowl.Using spoon and fork cover fish piece with crumbs.Place it on a plate.Repeat the procedure for all fish pieces.
  • Heat oil in a pan.Drop a small of fish,if it comesup immedieatly,your oil is ready.
  • Drop 3-4 pieces carefully using fork.Fry each side for 3-4 minutes.
  • Drain the excess oil and transfer fried fish on kitchen tissue paper to absorb excess oil.
  • Serve hot with onion rings and lemon wedges.

# Using hand to cover fish with breadcrumbs will make it hell messy work.So,use spoon and fork instead.

Fish Cake


I got 2 or 3 recipe from several TV show on BBC and TLC.I adjusted n came up with this.the result was absolutely tasty !!

INGREDIENTS
500 gm Fish
300 gm Potatoes (boiled)
2 White Onion
1-2 Spring Onion
1 tsp Chili flacks
1/2 tsp Parsley(dried)
2 Cup Bread crumbs
2 Cup stock
1 tsp Lemon zest
3 Eggs
Oil to fry
Salt to taste


DIRECTIONS


  • Heat 1 tsp oil in pan.add 1/2 onion and saute till its pink than add stock.once it start boiling,remove it from heat,add fish and close the lid.
  • After 5 minutes,drain fish out and d bone it.
  • Mash the potatoes,add finely chopped onions,parsley,chili flacks,salt,zest and shredded fish.Mix properly.
  • Make balls as desired size.Dip them one at time in egg,then roll in bread crumbs.Keep them in fridge for 30 minutes.
  • Heat oil in pan fry 2-3 minutes each side.
  • Serve with hung curd sauce or mayonnaise.


# 30 minute in fridge is important otherwise it will break while frying.
## You can dip in egg and breadcrumbs again at the time of frying to make it extra crisp.

Fish Curry



INGREDIENTS

1kg Fish
1Medium Onion
1Medium Tomato paste
3-4 Green chilli
5-6 Garlic clove
1tsp Ginger paste
1tsp Garam masala powder
1tsp Turmeric powder
1tsp Coriander powder
Salt to taste
1tbsp Mustard Oil
1tbsp Green Coriander 



DIRECTIONS


  • Rub some pinch of Salt and turmeric powder on fish and keep aside for 10 minutes.
  • Make paste of onion,ginger,garlic and green chilli.
  • In deep pan heat oil and add above paste.Add turmeric,coriander powder,salt.cook on medium heat till oil get separate.
  • Now add tomato paste and cook till it start sticking on pan.Now add around 1/2lt water and bring on boil for 10minutes.
  • On flat pan sprinkle some oil and fry fish on high heat to both side for 1 minute.
  • Add fish into it and let it cook for 6-7minutes.
  • Garnish with green coriander and serve hot with Roti or Rice.


# You can sprinkle some lemon juice when gravy is done.

Fried Fish(Kerala Style)




INGREDIENTS

5-6 pieces of Fish
1/2tsp Turmeric powder
1/2tsp chili powder
1/4tsp black pepper powder
1tsp ginger-garlic paste
1 Lemon juice
Salt to taste
Oil

DIRECTIONS

  • Make paste of ginger-garlic paste,salt,chili,turmeric,pepper powders.
  • Rub above paste on fish and keep it in fridge for atleast 1/2 hr.
  • On flat pan spread and heat oil.
  • Put fish pieces on pan and fry on medium heat for 4-5 minutes each sides.
  • Sprinkle some lemon juice and serve hot.

Fish Katsu balls



INGREDIENTS


1 lb fish fillet grind
3 cloves garlic, chopped
2 stalks spring onion, thinly sliced
4 tbsps all-purpose flour
2 egg whites
Salt and pepper, to taste
150 gr bread crumbs (I used Panko bread crumbs)
150 ml oil


DIRECTIONS:



  • Mix ground fish, garlic, flour, spring onion, and egg whites,season with  salt and pepper, to taste. (the fish batter is little bit wet,put it in refrigrator for some time).
  • Using 2 tablespoons, form the fish batter into small ball form. Dump the fish ball into the bread crumbs, make sure the balls fully covered by the bread crumbs.
  • Fry it until cooked and golden brown on medium heat. Serve it with chilli sauce.

# ball ll increase its size while frying,so make small balls.
## you can add some chilli flacks,if u want it bit spicy.

Madras Fish Fry




INGREDIENTS

1/2kg Fish
1tsp Rice powder
1tsp Chilli powder
1tsp Dhaniya powder
1/2 tsp Haldi
1tsp lemon juice
1/2tsp garam powder
Salt to taste

DIRECTION

  • Marinade fish with salt,lime juice,half of chilli powder,half of dhaniya powder,half of haldi for 1/2hr.
  • Soak rice powder in 1cup water for some time.
  • in rice paste add remaining spice powder.Mix this mixture in marinated fish.
  • Shallow fry it for 7-8 min on medium flame.
  • Serve hot with onion and lime wedges.

# you can use semolina(suji) instead of rice powder.
## if the pieces are thick,make small cut on skin for better marination and crispness.
