Paneer Pasanda




Paneer pasanda is one of the recipe which have many version...Generally it is crispy paneer (sometimes stuffed) cubes topped with rich gravy..This time i made the variation of it.

Actually i was having a bowl full of fresh home-made paneer.First i made some paneer stuffed parathas,but still there was half n bowl remaining..So planned to make this for lunch.So,here is my version of paneer pasanda....



INGREDIENTS
(Serving 2 )

1Cup Crushed Cottage Cheese(Paneer)
2tbsp All Purpose Flour
3tbsp Bread crumbs
1 Onion
5-6 Garlic
1'Garlic
1tsp Garam masala
1tbsp Curd
1tsp Cream
1/2Cup Milk
1tsp Chili powder
6--7 Cashews
2tbsp Oil
1tbsp Coriander leaves
Salt to taste


DIRECTIONS


  • Mix finely crushed paneer with 1tbsp of flour,pinch of salt and garam masala.Make 5-6 flat balls from the mixture. 
  • Mix 1tbsp flour in 4tbsp water.Dip the balls one by one in it carefully than roll them over bread crumbs.
  • Heat some oil on non stick pan.Fry the balls on medium heat till it turns crispy golden brown.
  • Make fine paste of onion,ginger-garlic with garam masala and chili powder.
  • Make Fine paste of cashews,curd,cream and milk together.
  • Heat oil in deep pan.Add masala paste and fry on low heat till oil come on top.
  • Low the heat,Mix curd-milk mixture in pan with 1/2cup water and let it simmer on low heat for 5minutes
  • Finally add coriander leaves.
  • Place fried ball on serving bowl and top it with hot gravy just before serving.



# For risher gravy oil can be replaced by butter.
## You can make balls and gravy in advance but Top the balls at the time of serving otherwise it will loose its crispyness.

Sham Savera


I got this recipe from masterchef India-2,where Sanjeev kapoor has presented this as challenge to contestants.Finally i made this today for lunch...Though i don't like its name but taste was nice.

INGREDIENTS
For Balls
250gm Cottage Cheese(Paneer) grated
1/4tsp Salt
1/8tsp Cardamon powder
1/8tsp Cinnamon powder
1/2kg Spinach
1tbsp Besan
1tsp Oil
2 Garlic(finely chopped)
1 Green Chili(finely chopped)
1/4tsp Haldi
1/4tsp Cumin seeds
1tbsp Cornflour
For Gravy
3 Tomatoes(Puree)
2-3 Garlic
1tsp Chili powder(prefer kashmiri)
1tbsp Butter
2 Cardamom
1/2tsp Garam Masala
1tbsp Cream
1tsp Kasuri methi(Powder)
Salt to taste
1tbsp Honey


DIRECTIONS
For Balls
  • Mix cottage cheese,cardamom powder,salt together and make 5 equal size balls.
  • Blanch Spinach leaves in 3cup of water for 2-3 minute.Drain and refresh under cold water.
  • Remove extra water and chop it very finely.
  • Heat oil in pan.Add cumin seeds,garlic,green chili,saute for moment.Add besan,salt and turmeric powder,saute for 2minutes.Add spinach,mix and saute till its totally dry.Let it cool.
  • Divide spinach mixture in 5 equal portion and fill cottage cheeze ball in each one of them using palm.
  • Roll these ball in cornflour and deep fry in oil on medium heat for 2-3 minutes.

For Gravy
  • Heat butter in deep pan.Add garlic,caramom,saute for moment.
  • Add tomato puree,salt,chili powder,garam masala with 1/2 cup of water and let it cook on low flame for around 20minutes.(till tomatoes raw smell disappear)
  • Add honey and kasuri methi.Cook for another 2minutes.


  • Finally add cream and mix it well.
  • Transfer the gravy in serving dish.Cut the balls in half and place them on gravy.Serve hot with Butter roti.


# You can use 1tsp sugar instead of honey,if honey is not available.
## Adjust the taste of gravy as per your taste.

Paneer Tikka





INGREDIENTS


Paneer – 200 gms,cut into squares
Capsicum – 1,cut into 1’ pieces
Onion – 2,cut into cubes
Tomato – 2,cut into cubes



For the Marinade

1 cup Hung curd(hang dahi in a muslin cloth for 20 minutes)
3 tbsp Thick cream
1 ½ tbsp Butter
1 tbsp Ginger-garlic paste
½ tsp  Red chilly powder
1 tbsp Tandoori masala Or Chicken masala
Salt to taste


DIRECTIONS



  • Take all the ingredients for the marinade in a mixing bowl and add paneer and rest of the veggies.Mix well and keep aside for at least an hour.
  • Grease wire or grill rack or tawa.
  • Arrange the tikkas on a skewer or a wooden toothpick(if using toothpick,soak it in water for sometime).
  • Place the tikkas on tawa or grill and cook for 4-5 minutes each side.
  • Sprinkle some melted butter on the tikkas and cook again for 5 minutes.
  • Sprinkle chat masala and lemon juice.
  • Serve hot with green chutney!!




# if U are using tawa,u can hold skewer over an open flame for a few seconds to get the classic kabab style burnt effect on the chicken pieces.
