Chicken Kabuli

I got this recipe some days back on internet from some local Afghan chef and loved it.Just made some tiny changes..Dish turned out really well and full of flavors.


1kg Chicken
1 Onion(boiled and paste)
1onion (finely chopped)
1tsp Ginger paste
1tsp Garlic paste
2 Tomatoes(paste)
1cup Curd
10 Almonds(blanched and ground)
1tsp Cumin seeds
1/2tsp Fennel seeds
5 Green cardamom powder
1tsp coriander powder
1tsp Pepper powder
1/2tsp Mace
1/2tsp Nutmeg
1/2tsp Clove powder
Salt to taste
2tbsp Cream
2tbsp Oil/Butter
2tbsp green Coriander(finely chopped)


  • Marinade chicken with ground almonds,ginger-garlic paste,salt and curd for 4-5 hours.
  • Heat oil in heavy bottom pan.Add Chopped onions.Saute till it turrns pink.
  • remove chicken from marinade and add to pan.cook on high heat till it change its color.
  • Add onion paste,tomato paste and all spices.Mix and cook for another 5minutes.
  • Add marinade.Low the heat and cook for 20minutes or till it become tender.
  • Finally add cream and mix well.Garnish with coriander and serve hot with roti.

Its raining here and pohe is best for this time(considering tummy and mode).So,here is the simple yet tasty dish which you can have in breakfast,in lunch or whenever you want to have something light n filling !


1Cup Pohe (chiwda/flattened rice)
1 Onion
1-2 Green chilies
1 Tomato(small)
1tsp Green coriander
1/2tsp Mustard seeds
2-3 Curry leaves(optional)
1/2tsp Chili powder
1/2tsp Turmeric powder
Salt to taste
1 Lemon juice
2tbsp crushed roasted peanuts
2-3 tbsp Pomegranate 
2tsp Oil

  • Take pohe in bowl and wash 2-3 times with water than Soak in 1cup water for 5-6 minutes.Rinse and squeeze extra water from it.Transfer in another bowl,sprinkle salt,chili powder,turmeric powder and toss it.
  • In pan heat oil.on medium heat add chopped onion,chilies and musturd seeds.Saute till onion turns pink.
  • Add pohe and mix well,cook for 2-3 minutes.Mix green coriander and remove from heat.
  • Finally while serving sprinkle some lemon juice.
  • Garnish with crushed roasted peanuts,pomegranate.

# Prefer thick pohe.If you are using thinner one don't soak it in water,just wash and sqeeze as soon as poosible and Spread on newspaper for 3-4 minutes.
## you can add pinch of garam masala,chat masala too.

Stuffed whole Chicken

100th post...So,here is my celebration dish,stuffed whole chicken without any oven ! I was overwhelmed with its soft and juicy texture.Just try it and see the reaction of your  family !

1 Whole chicken
1-2 Eggs(boiled)
3 Onion(medium)
2tsp ginger garlic paste
1cup Curd
1tsp Garam masala(fresh)
1tsp turmeric powder
1tsp chili powder
2-3 drops Orange food color(optional)
1.5tsp Salt
2cup Oil for frying


  • Mix curd with ginger garlic paste,chili,turmeric,1/2tsp garam masala,1tsp salt,food color(if using).
  • rub above mixture on all over chicken for 1 minute.Put marinated chicken in fridge for overnight.
  • In pan heat 1tsp oil.Add chopped onion(Julian) and saute till it turns pink in color.Add salt,garam masala.
  • Stuff the chicken with onions and egg(1 or 2 depending upon chicken size).Close the hole with toothpick and tie legs with thick thread.
  • Steam chicken for 15minutes on high heat.drain and keep aside for 10minutes.
  • Heat oil in deep pan.When its super hot.Gently slip the chicken in it.Fry on high heat both side for 5minutes each.
  • For smokey flavor,just tuck 2skewer in and roll over high flame for few seconds.
  • Serve with some roomali roti,gravy and mint chutney.

# Marinate atleast 5-6 hours,but longer is better.
## Make sure oil is super hot then It will not absorb any oil while frying.
### Take precaution while frying as oil will sputter very much in starting.

Coconut Ice

Believe me,its world's easiest sweet dish ! Just couple of things and are done! and taste...people will just love it.

1/2tin Condensed Milk
250gm Coconut(desiccated)
3tbsp Sugar(powder)
1/4cup melted chocolate

  • Mix condensed milk and sugar.Stir in coconut properly.
  • Divide mixture in half.
  • In one portion add melted chocolate.
  • In square tin,spread one portion and press it firmly.Now spread another portion on top of it and press again.
  • Cover and put in fridge for atleast 2-3 hours.
  • Cut in pieces and serve.

# You can use different color in mixture for more fun.
## These can be stored in airtight container upto 3weeks.

Coffee Crumble Cupcakes

I was having some recipes for coffee cake,crumble cake etc.Today i don't know from where i got idea to make this small cupcakes..they are super easy to make and healthy too..I loved the caramel-nutty crunch on top of it !

1/2cup Wheat flour
1/2cup Sugar
1 Egg
1/2 Baking powder
1tsp Cornflour
Pinch of Salt
1/4cup Milk
2tbsp Oil/Butter
1tsp coffee powder
for crumble:
1/2tsp flour
2tbsp sugar
1/2tsp butter/oil
1/2tsp coffee
3tbsp Mixed nuts(crushed)


  • Sift flour,baking powder,1tsp coffee,salt together in bowl.
  • Beat Butter/oil with 1/2cup sugar till it become smooth.Add egg yolk and beat another 2-3 minutes.
  • Mix this sugar-butter-egg mixture with dry ingredients properly.
  • Beat egg white till it become foamy.Add this in above batter.
  • Finally add milk to make batter.
  • For crumble:mix all ingredients together.
  • Grease 4 cupcake molds nicely and sprinkle some fine flour over them.
  • Divide batter equally in all 4 molds.Top them with crumbles.
  • Bake them in preheated oven on 180-170'c For 10 minutes.
  • Serve warm with tea or coffee.

# Above ingredients are for 3-4 cupcakes depending on size of molds.
## You can use more crumble if you like.

Stuffed Eggnets

Its best for healthy evening snack.and very very easy to make.Just use your imagination for stuffing and enjoy! While stuffing just stuff in the way that veggies don't loose their texture.

1tbsp Oil
1 tsp coriander leaves
1 Apple
1tbsp Tomato ketchup
1tsp Vineger
1tsp lemon juice
Pinch of chili flacks
Handfull of Roasted nuts
1Cup of boneless chicken (cooked-chunks/shredded)
Salt to taste


  • Cut veggies in thin long slices. or just make shaving of them.sprinkle lemon juice and keep aside.
  • Beat egg in bowl.Don't over beat.(1minute is enough).Keep it in fridge for 1hr.Bring on room temperature before using.
  • Heat flat pan and sprinkle some oil.On low flame Make nets with the help of need to flip.just remove carefully and keep can make 4-5 eggnets from this mixture.
  • Now take one eggnet on flat surface.Spread some cucumber,tomatoes,apples,chicken,sprinkle some vineger,chili flacks,salt and seasoning in center. Now first fold both side than roll it.
  • Your stuffed eggnet is ready !

# Use any stuffing of your choice.You can prawns,sprouts,noodles,peanuts,nuts etc.
## These eggnets came be made in advance.But after stuffing,don't leave for much time.

Afgani Chicken Roast

We had this 2-3 years back in some restaurant in chennai and fell in love instantly !! Finally i came up with this perfect recipe which is very easy..n sure hit !!!

1Kg Chicken(cuts of your choice)
1cup Hung curd
10-12 Almonds
8-10 Black pepper(crushed)
6-7 Garlic clove
1" Ginger
1/2tsp Garam Masala*
1tsp Salt
3tbsp milk(full cream)
3-4tbsp Butter/ghee/oil


  • Keep almonds in warm water for 1/2hr than peel it.
  • Mix curd,garlic,ginger,spices,pepper,salt,almonds and make a fine paste.
  • Marinade chicken with above paste and keep in fridge for at least 2 hours.
  • Heat some butter on pan and place 5-6 pieces on it.Fry 7-8 minutes each sides.
  • Insert cooked pieces on skewer.brush it with some milk and rotate on high flame for few seconds.OR Bake in oven on 170'C for 20-25minutes.
  • Serve hot with mint chutney.

*(pinch of mace,nutmeg,small stick of cinnamon,4 green cardamom,1black cardamom,4cloves)

# For best result don't use preserved ginger garlic paste.
## Use fresh garam masala.
### You can use 1tbsp of cream in marinade for extra mildness.

Jam Marble Cake

I was having a big jar of mixed fruit jam in my fridge for long long time...So,to get rid of that i came up with this...and it turned out just yumm !!! This recipe is for 6" pan.But i made 2small cakes from this.Also i made this with wheat flour(Atta) but you can make it with fine flour.


1cup Wheat Flour/ Fine flour
1/4cup Oil
1 Egg
2tbsp Jam(your choice)
3/4cup Sugar
1tsp Baking powder
1/8tsp Baking soda
1/2cup Milk
Few drops lemon juice
1tsp Coco powder
1tbsp Coconut(shredded)


  • Mix sugar,oil and egg until it become light and white colour.
  • Add lemon juice in milk and mix this in above mixture.
  • Sift flour,baking powder and baking soda together.
  • Mix dry ingredients with wet mixture.
  • Divide batter in two portions.
  • In one portion add coco powder and in another coconut.
  • In greased baking tin,first add 1tbsp of coco batter then 1/2tbsp of coconut slowly add 1tbsp of jam in center. again spread 1/2tbsp of coconut batter and finally spread 1tbsp of coco batter on top.
  • Bake this for 20 minutes on 180'C.(or until toothpick comes our clean)
  • Let it cool down for an hr.
  • D-mold and serve with cream or ice-cream or they are good by there own !
# In my cake jam sinked in a bit because of bit thin don't make batter very thin,is you want jam exactly in center.

Chicken Sultana

I was searching for this recipe for a long time,but never got any..finally i tried to come up with my own.and got almost there in taste !!!

1 full Chicken (tikka/roast)
3 Onions(medium)
2 Tomatoes
2tsp Ginger-garlic paste
2tbsp Cream
1/2cup yogurt
1 Capsicum
1tsp Chili powder
1tsp Coriander powder
1/2 tsp Turmeric powder
1tsp Garam Masala powder
1tbsp Whole spices*
1tsp Kasuri methi leaves
Handful of Raisins..
2tbsp Oil/Butter
Salt to taste


  • Cut 2 onion in big chunks and boil in 2cup of water for 5minutes.Drain and make fine paste.
  • Cut the head of tomatoes and boil in 2cup of water for 5minutes.Remove the skin and cut roughly.
  • In deep pan heat oil.Add whole spices and finely chopped 1onion.Saute for 7-8 minutes than add ginger-garlic paste.when it start sticking on bottom,add tomatoes and all ground spices and raisins...Cook in on low flame for 10 minutes.
  • Add chicken tikka and mix well.
  • Slow the heat.Now add yogurt slowly.close the lid for 2-3 muntes.
  • Add cream and mix well.
  • Finally add cubed capsicum,onion,methi leaves on top and close the lid.Remove from heat and open at least after 10 minutes.

# You will get very thick gravy in this dish.If you want more add some milk and water in yoghurt.Add cook for some more time.
## Never add yoghurt on high heat.It will curdle and u ll not get smooth texture in gravy
### You can add cubed Eggs and tomatoes with capsicum in last.

*(1"cinnamon,5Clove,6-7 Black pepper,1black cardamom,3green cardamom,1tsp cumin seeds,1blade mace,1/2tsp fennel seeds,3Bay leaves)
