Glazed Jam Choco Cake


I was having a bottle of mix fruit jam in my fridge from several months.I searched many times over net for some recipe using jam..Finally i got inspired with idea of making cake..It tuned out super moist and delicious one! my sister almost finished all in one go !! next time i ll serve this warm with some custard.
Note:This cake is strictly for jam lover !




INGREDIENTS:

1Cup Wheat flour 
1/2Cup butter/Oil
1/2Cup Honey
1tbsp Sugar
1/2Cup Water
2tbsp fruit jam(your choice)
1tsp Baking powder
¼ tsp Baking soda
2tbsp cocoa
1 egg
Additional 1 tbsp of jam for glazing

DIRECTIONS


  • Preheat oven to 180 degrees.
  • Separate egg yolk and white.Whisk egg white till soft peak occur.
  • Mix well butter/oil, sugar, warm water,honey and jam into bowl.Add egg yolk and mix again.
  • Add dry ingredients and mix until well combined.Finally add egg white and just mix with very light hand.
  • Scrape mixture into the prepared tin (it may be a little runny) and bake for 30-35 minutes.
  • Leave in the tin for 10 minutes before turning out.
  • Spread the cake with the additional tbsp of jam that has been warmed with splash of water.
  • Enjoy as a deliciously moist cake or as a dessert served with whipped cream or custard.

# I used mix fruit jam but you can use any of your choice.
## Poke the cake with fork before spreading jam over cake.

Sesame Chicken



INGREDIENTS:

1Kg Chicken(cut into 8-10 pieces)
1Cup Yogurt
1tsp Red chili powder
1tsp Turmeric powder
1tsp Coriander seed powder
3tbsp Coconut (dried and crushed)
4tbsp Sesame seeds(roasted)
2tbsp Ginger-Garlic paste
1Cup Milk
2tbsp Oil
3 Onions1.5tsp Cumin
5-6 Cloves
1tsp Black pepper whole
1" Cinnamon stick
1 Black cardamom
4 Green cardamom1 Tomato (paste)
2 Green chilies
Salt to taste

DIRECTIONS


  • Marinade chicken with yogurt,chili powder,turmeric,milk,1 tbsp ginger-garlic paste,coconut and sesame seeds for 2 hours. 
  • Fry onion in the oil and take it out when its nicely brown.
  • Add all ingredients into the oil except for tomato paste and green chilies. Fry them for a minute or two and then add the remaining two ingredients.
  • When oil get separate, add only chicken from the marinade and stir-fry it until it releases some oil.(around 10 minutes)
  • Add the marinade and let it cook.When it has dried up half way, add salt and fried onion (crush it with hand).
  • Stir it on medium heat until the oil comes up.
  • Garnish with green coriander and serve with roti or rice.


#Its semi dry dish.if you want gravy then just increase the quantity yogurt and milk and Adjust spices as per your taste buds.

Coconut Crumble Cake



Another interesting recipe of cake which is must try for any coconut lover ! 

INGREDIENTS

1Cup Wheat flour(Atta)
3/4Cup Sugar
1/4Cup Oil
1Cup Coconut(fine shredded)
3/4Cup Milk
1Egg
1/8tsp Baking soda
Pinch of Salt

for crumble:
2tsp Butter
2tsp Flour
4tsp brown sugar
1-2tsp Coconut(shredded)
1tsp Almond chopped(optional)

DIRECTIONS

Preheat the oven on 180'C.
Soak coconut in warm milk for 10 minutes. coconut will swell up.
Separate egg white with yolk.
Whisk egg white until soft peak form.
Sift flour,baking soda,baking powder together twice.
Mix oil and sugar in a bowl until light.Add egg yolk and mix.
Add dry flour mixture in oil sugar mixture and mix.then add coconut and milk.Mix properly.
Finally add egg white and mix with light hand.(don't over mix)
Transfer above batter in 6"pan.
Mix all the ingredients of crumble and spread over batter evenly.
Bake for 30 minute then check if it done by inserting toothpick in center if its come clean-cake is done !
Let it cool down for an 1 hr.
D mold and enjoy !!


# You can add Vanilla essence if you wish.
## You can add some coffee in crumble.

Semolina Cookies


INGREDIENTS

1Cup Semolina
1/2Cup Flour
1tsp Baking powder
1/2Cup Sugar
1/4Cup Butter
Pinch of Salt
1/8 Cinnamon powder
1/8Cup Water

DIRECTIONS


  • Preheat the oven on 180'C.
  • Sift semolina,flour,baking powder,salt and cinnamon together.
  • Mix butter,sugar and water properly.
  • Add dry mixture with wet mixture.Don't over mix.
  • Make 15-18 equal portion of dough and press them slightly on baking tray lined with butter paper.
  • Bake for 10 minutes and let it rest for 5 minutes.


# You can press choco chip or coffee beans in center of each cookie.
## Instead of cinnamon,you can use all spice or cardamom.

Chicken with Mixed Herbs


Another chicken recipe which doesn't have any authenticity yet simply delish to have...

INGREDIENTS
1Kg Chicken
2 Onion
1 Tomato
3tsp Ginger-Garlic paste
1tsp dried Oregano
1tsp Parsley
4-5 Bay leaves
1/2tsp Rosemary
1 lemon 
2 Green Chilies
1/2tsp White pepper
1/2tsp Black papper
1 Black Cardamom
1tsp Chili flacks
1tsp Turmeric powder
1tsp Crushed Coriander seeds
1tsp Fennel seeds
1tbsp Oil

DIRECTIONS


  • Marinade the chicken with half of ginger garlic paste,green chilies,oregano, rosemary,2 crushed bay leaves,pepper,lemon juice and zest for at-least 2 hrs.
  • Heat oil in heavy bottom pan.Add Onion,saute till they turn golden.add black cardamom,bay leaves and cinnamon.After 1 minutes add ginger-garlic paste,fry them till they start sticking in bottom.
  • Remove chicken from marinade and add them in pan.fry on high heat for 10minutes.(don't throw the marinade juices)
  • Add all remaining spices and finely chopped tomato.
  • Close the lid and cook till its tender on low heat.(arround 15minutes)
  • Serve hot with Bread of your choice.



# You can sprinkle some garam masala powder while serving.




Mini Choux Pastry


 I am watching Crquembouche and Coux pastries in Masterchef from past 3-4 years.Finally i decided to give them a try.They turned out nice.My first batch was bit soggy from inside.So,in next batch i left them in oven power off  for another 10 minutes,and it worked !!I dip the top of them in caramel,which become hard and given very nice crunchy sweet flavor.. I suggest to fill them with custard just before serving.

INGREDIENTS
(15 mini size)


1/2 cup water
3 tablespoons butter
1/2 teaspoon sugar
1/4 teaspoon salt
1/2 cup all-purpose flour
2 medium eggs

DIRECTIONS

  • Preheat the oven to 425°F (210°C).
  • Mix water, butter, sugar and salt in a medium sized saucepan and place on medium heat.Remove from heat as soon as the butter has melted and the water is boiling.
  • Stir in all of the flour at once. Mix for at least two minutes and until the mixture is smooth, detaches from the sides of the pan, and forms a ball. (it ll get dry)
  • Add one egg and beat the mixture vigorously with a wooden spoon until the egg is fully incorporated. Add the other one in the same way. Each egg takes about a minute to be absorbed into the batter.The batter will become glossy.
  • Scoop or pipe the puffs onto a baking tray covered with parchment cooking paper. If you wish, use a pastry brush to lightly coat the tops of the puffs with beaten egg. This will give the puffs a lovely shiny and slightly crunchy finish.
  • Bake them for 15-20minutes,lower the oven temperature to 375° F (190°C), and bake 10 to 15 minutes longer. 
  • Pierce each puff and return the tray to the oven that has been turned off. Leave them in the oven for around 10minutes.(this ll make pastries crunchy from inside)
  • Finally,make a hole on side of each pastry and fill them with custurd with the help of piping bag.
  • Pastries are ready.You can cover them with caramel or just dust with icing sugar.



# If you use a pastry bag, a 1/2 inch diameter tip is good for small puffs.
## When forming the puffs, keep in mind that each one will at least double in size in all directions

Cumin Cookies


This one is one of those biscuits which you can have without any guilt..Sweet-salty flavor make them perfect combo with Tea or Coffee.Just make them and keep in airtight container...

INGREDIENTS 

1Cup Wheat flour
1/4Cup Butter/Vegetable Oil
1tsp Cumin Seeds
1tsp Sugar
1/2tsp Salt
4tbsp Milk
1tbsp Fresh Curd
1/2tsp Baking powder

DIRECTIONS


  • Mix flour,salt,Baking powder,cumin seeds and powdered sugar well in bowl.
  • Add oil and milk and mix till it form dough.
  • Roll the dough and cut in desired shape.
  • Sprinkle and press some cumin seed on top.
  • Bake on 180'C for 15 minutes.It will be golden brown when done.
  • Keep in airtight container once it cool.

# You can brush some egg them before in baking.It will give nice glaze to them.
## You can make Carom cookies by just replacing cumin with carom.

Peshawari Boti fry


This picture was in my draft from many days.Finally its here.It got very garlicy flavor and can be serve as starter or side dish.

INGREDIENTS

1/2Kg Mutton
1 Onion
10 Cloves Garlic
1" Ginger
3 Green chilies
1 lemon 
1tbsp Whole Spices*
1tsp Turmeric powder
1tsp Chili powder
1tsp Coriander powder
1tsp Garam Masala powder
1tbsp Oil
Salt t o taste

DIRECTIONS


  • Clean mutton and dry it completely.
  • Heat oil in heavy bottom pan.Add finely chopped ginger-garlic and whole spices.Saute for a minute.
  • Add mutton and fry on high heat for 7-8 minutes.Add finely chopped onion another 5 minutes.
  • Low down the heat then add all powder (except garam masala) spices.Close the lid and cook till its tender.
  • Finally add lemon juice,garam masala and green coriander and let it rest for 5 minutes with closed lid.
  • Serve hot.


*1tsp Cumin seeds,1'cinnamon,1/2tsp black pepper,1/2tsp cloves,1/4tsp nutmeg,pinch of mace,3green cardamom,2black cardamom.

Cream of Mushroom Soup


Here is my first recipe for soup...I just love soups...and this one is my all time favorite... !! If you like mushroom,this one is surely for you...

INGREDIENTS

1Cup Mushrooms(i used button)
1 Onion(white)
2 Cloves Garlic
1tsp Butter
1/2tsp Black pepper(crushed)
Salt to taste
1 Cup Vegetable Stock
1 Cup Milk
1tbsp Cream

DIRECTIONS


  • Heat butter in pan.Add chopped onion and garlic.Saute till its pink.
  • Add finely sliced Mushrooms and fry on high heat till they become brown at edges,it will take around 5 minutes.
  • Add stock,close the lid and cook till mushroom are cooked(around 7-8 minutes)
  • Let it cool down.Now blend its.
  • Transfer it in pan again and add milk,pepper,salt according to your taste.
  • Simmer on low heat for 4-5 minutes.
  • Finally add cream.Serve hot.



#You can add some dried parsley or white pepper if you like.
## You can add some butter at last.

Besan(chickpea flour) Cookies


We use to have these cookies in our childhood a lot.. and now after these long years,finally i  made these... its very easy to make n simply delicious !!

INGREDIENTS


1 cup Besan(chickpea flour)

1/2 cup butter
1/2 cup Sugar
2 Cardamoms(powdered)
1/2 tsp Baking Powder
6 Almonds

DIRECTIONS
  • Mix butter and sugar nicely.
  • Sift flour,baking powder together.Add cardamom powder.
  • Mix butter mixture in flour and mix till it form dough.
  • divide dough in 10-12 balls.
  • Dust the baking dish.place ball on it,press half almond in center and bake for 12 minutes on  180'C.
  • Let it come on room temperature then transfer it in air tight container.

# you can use vanilla essence instead of cardamom.
## when hot cookies ll be soft,it ll get firm later.

Fish Cake


I got 2 or 3 recipe from several TV show on BBC and TLC.I adjusted n came up with this.the result was absolutely tasty !!

INGREDIENTS
500 gm Fish
300 gm Potatoes (boiled)
2 White Onion
1-2 Spring Onion
1 tsp Chili flacks
1/2 tsp Parsley(dried)
2 Cup Bread crumbs
2 Cup stock
1 tsp Lemon zest
3 Eggs
Oil to fry
Salt to taste


DIRECTIONS


  • Heat 1 tsp oil in pan.add 1/2 onion and saute till its pink than add stock.once it start boiling,remove it from heat,add fish and close the lid.
  • After 5 minutes,drain fish out and d bone it.
  • Mash the potatoes,add finely chopped onions,parsley,chili flacks,salt,zest and shredded fish.Mix properly.
  • Make balls as desired size.Dip them one at time in egg,then roll in bread crumbs.Keep them in fridge for 30 minutes.
  • Heat oil in pan fry 2-3 minutes each side.
  • Serve with hung curd sauce or mayonnaise.


# 30 minute in fridge is important otherwise it will break while frying.
## You can dip in egg and breadcrumbs again at the time of frying to make it extra crisp.
